Fruity Green Lentils Oriental Style

Lentils can be combined with pretty much everything. The combination with fruit has been on my list for a long time already. I wanted to go with pomegranate seeds that I could not dig up, however. So I tried it with the goji berries that have been lying around in my pantry for at least a year.

Cologne-Style Black Bread

The succulent black bread of my hometown Cologne is one of the foods that I miss the most in Bulgaria. Fortunately, you can easily bake it at home, as long as you manage to dig up the ingredients (or suitable replacements). The ones that are hard to find in Bulgaria are dark molasses, buttermilk and rye grist.

Red Dead-Nettles in Pancake

A few days ago, my garden all of a sudden was shining in lush purple. The plants were quickly identified as red dead-nettles (lamium purpureum). Great! However, the lawnmower packed up, just when I tried to get rid of the weeds and I do not own a goat. Fortunately the plant turned out to be fully edible for humans too. Mission accomplished!

Coco Chickpeas, Pakoras, Mango Chutney, and Oriental Yoghurt

Having to kill one day at the airport, on the plane, at the station and on the train always stirs the desire to cook something tasty so that I can chase away the ominpresent impressions of fast food and convenience products. The result of the last unvoluntary fasting are these chickpeas with coconut milk, pakoras, mango chutney and oriental yoghurt.

Home-Made Soured Milk

Soured milk is another fermented dairy product that can be made at home with very little effort. The German word for it is Dickmilch which means "thick milk". In Germany, it has lost a lot of its popularity to yoghurt but it can still be found in many supermarket shelfs. It is quite similar to yoghurt in taste and consistency but contrary to yoghurt it is very simple to make, even at home.

Home-made Sour Cream Butter

A recipe for self-made sour cream butter is at the same time a recipe for butter, crème fraîche and for buttermilk. I am a big fan of ice-cold buttermilk in summer and I love to cook with crème fraîche. Unfortunately, both products are hard to get in Sofia. Only the German supermarkt Hit sells them, and they are often sold out. Making butter at home makes that shortage a little bit easier to live with.

Ketchup

Ketchup is one of the industrial products from the supermarket that can be prepared at home with amost zero effort. And you can re-invent home-made ketchup every time you cook it. It invites to experiments with spices and ingredients and is, by the way, a handy method for saving tomatoes that are no longer shiny and flawless, from being thrown away.

Draff Bread

The only real waste from brewing beer is draff, that is what is left off from cooking the malt. You can feed it to animals or compost it but I replaced the sunflower seeds from my favorite bread recipe with the draff from the last brewing day.

Olive Paste

Olive paste is spread on every second sandwich in Bulgaria. On a recent visit home in Cologne I desparately needed some olive paste (for a vegetarian burger) and could not find any in shops around. I didn't search for a long time though because I was pretty sure that it is dead easy to do yourself. That way want of something can become a stroke of luck.
